Cold Weather Favourite: Cannellini and Pancetta Soup, By David Rocco

Cannellini and Pancetta Soup
In a pot heat up some extra virgin olive oil and cubed pancetta. Once it begins to brown, add in whole crushed garlic and fresh chopped chilli peppers (it’s important not to add garlic before the pancetta, as it will burn and get bitter).
Add a can–19 oz/540 ml–cannellini beans (drained and rinsed) and some salt and pepper. Mix and mash the beans and add two cups of cups of water. Bring to a light boil on low to medium heat and cook for 15 minutes.
Drizzle with some extra virgin olive oil and some day-old tuscan bread. Buon appetito!
